While my husband spent all day tending to ribs on Green Egg on Saturday, I figured the least I could do was serve up a dessert worthy of his efforts. As the smoker did its magic, we kicked back with a smooth Natural Ligero by La Flor Dominicana and a pour of the newly released 1792 Cognac Cask Finish—a pairing that set the tone for a slow, flavorful evening.

To match the warmth and richness of the night, I decided to put a twist on a summer classic: peach cobbler. But this time, I gave it my own spin—a bourbon peach crisp, using fresh peaches, oats, and a generous splash of bourbon.

Its smooth vanilla and oak notes played perfectly against the sweetness of the peaches and added just enough depth to make this dessert feel indulgent and elevated.

The result? A golden, bubbling crisp that tasted like summer in a cast iron dish—warm, spiced, and finished with just a hint of bourbon love.

Bourbon Peach Crisp with Russell’s 10

Serves: 6–8
Prep Time: 15 mins
Cook Time: 45 mins
Total Time: ~1 hour

Filling Ingredients:

  • 5-6 ripe peaches, peeled and sliced
  • ½ cup bourbon (I used Russell’s Reserve 10 Year)
  • ½ cup brown sugar

Crisp Topping:

  • 1 stick unsalted butter (cold, cut into cubes)
  • ¾ cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 1 tbsp pumpkin pie spice
    • Cinnamon is fine too but I love the nutmeg & clove of pumpkin spice
  • ¾ cup old-fashioned oats
  • ½ cup brown sugar

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly butter a 9-inch baking dish or cast iron skillet.
  2. In a medium sauce pan, toss sliced peaches with bourbon and 1/2 cup brown sugar. Simmer on low for 15 minutes.
  3. Pour the peach mixture into the prepared dish.
  4. In another bowl, combine flour, sugar, salt, pumpkin spice, brown sugar and oats.
  5. Cut in the butter using a pastry cutter or your fingers until mixture resembles coarse crumbs.
  6. Sprinkle topping evenly over the peach filling.
  7. Bake for 45 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.
