Traditionally, I always think of October as apple season. But with fall still lingering into early November — no big freeze yet, though it’s coming — the air still carries that soft warmth that invites one more evening outdoors. Sitting out by the lake, watching the geese come and go, I felt inspired to mix up something different from my usual old fashioned.

This time, I went with an apple cider bourbon cocktail finished with a splash of ginger beer — light, crisp, and quietly refreshing. I chose High West Bourbon, coming in at around 92 proof, which turned out to be the perfect balance for a mixed cocktail. The flavor had enough body and oak character to complement the apple cider without overpowering it. I love their Rye, but that would’ve been too spicy and hot for this kind of drink. The bourbon’s smooth caramel and honey notes paired beautifully with the subtle spice of the ginger beer — the kind of sip that lets you just relax, breathe, and take in the calm tones of fall before winter hits.
